Recipe for around 8 cookies:
115g chocolate (I used dark)
30g unsalted butter
47g all purpose flour
10g cocoa powder
1 tsp espresso powder
75g brown sugar
25g white sugar
1 egg
1. Combine the butter and chocolate in a bowl and melt until smooth.
2. In a separate bowl whisk together the egg and sugars until pale yellow colour.
3. Add the chocolate and butter mixture, slowly whisk at low speed until combined.
4. Whisk in the dry ingredients and mix until combined.
5. Bake in a preheated oven at 180°C for 10 minutes!
