The Easiest Fudgy, One Bowl Small Batch Brownies



These small batch brownies come together in one bowl in just 10 minutes! My recipe makes six fudgy brownies–perfect for one or two people.

Ingredients
⅔ cup granulated sugar (133g)
⅓ cup all-purpose flour (42g)
¼ cup natural unsweetened cocoa powder (25g)
⅛ teaspoon baking powder
¼ teaspoon salt
4 Tablespoons unsalted butter, melted (57g)
1 large egg, lightly beaten
½ teaspoon vanilla extract
¼ cup semisweet chocolate chips (plus additional for topping, if desired). (45g + additional)

Instructions
00:00 Introduction
00:29 Preheat oven to 350F (175C) and line a 9×5 bread pan with a sling of parchment paper (this will make removing the brownies and cutting them easier). Set aside.
00:33 In a medium-sized mixing bowl, whisk together sugar, flour, cocoa powder, baking powder, and salt.
00:50 Stir in melted butter (mixture will be stiff and dry) then add egg and vanilla extract. Whisk vigorously to combine (the more mixing you do, the more likely you are to have those shiny, crackly brownie tops!).
01:54 Stir in chocolate chips and spread batter into prepared pan. Scatter additional chocolate chips on top, if desired.
02:46 Transfer to center rack of 350F (175C) oven and bake for 23-25 minutes or until a toothpick comes out clean or with fudgy crumbs (not wet batter).
03:03 Allow to cool before lifting brownies from pan and cutting. Enjoy!

Storing
I think leftovers are unlikely here, but if you find yourself with some extra simply store in an airtight container at room temperature for up to 3 days.

  1. Perfect recipe for a Solo Senior that wants just a few brownies. I like the baking powder addition , as I don't mind a more cakey texture.

  2. I made these last night, and they were so easy and tasty too. One thing though – mine turned out more cakey than fudgy. I think it was because of the baking powder. I am going to try again soon but without the baking powder and maybe use a little more butter. But otherwise, these were good!

  3. Lol I think some people… like if they just want some brownies themselves but no one else is around… maybe they'd want a smaller batch so they don't end up blowing their whole day's calories on brownies. Some people can eat a whole tray of brownies and regret it later… cough cough 🙋🏻‍♀

  4. Thank you for the awesome recipe! I made one change; I omitted the baking powder because that's what I always do when making brownies, because I want them as chewy as I could get them! I used black cacao powder, and they turned out great!

  5. I made these tonight and they turned out great! Super fudgey. I needed 28 minutes but going over the recipe time is normal for my oven. I am going on a little girls trip and we needed a sweet for the ride. There really is a time and place for small batches! 😂

    I didn't ask for this, but I might of if I had dared. FINE, I guess I will have to add them to the list. Now I have a real conundrum. I was getting ready to make THOSE chocolate chip cookies, we all know the ones. But now there is this, a small batch. Less is healthy, right? After all regardless of which I make I am going to eat THEM ALL! LOL Decisions, decisions. What is a guy to do?

  7. Thank you so much! I have a small household w/diabetics so I am always taking a 'normal sized' recipe and dividing by thirds or quarters. The only thing I would do is to add some pecans or walnuts.
